IP English Muffin
Ingredients:
1 Pkg IP Crepe Mix
1/2 tsp baking powder
1/2 tbsp Olive Oil
1 dash salt
1 oz skim milk (approx 2 tbsp)
4-6 tbsp water (enough to make thick but pourable batter)
Directions:
Whisk together dry ingredients
Add oil and mix until it forms crumbles
Add milk and mix well (becomes a doughy batter at this point)
Add enough water so that it’s thick but able to be poured
Let sit a few minutes to thicken
Spray a non-stick pan with pam and spray inside your muffin rings
Put your pan with muffin rings on the stove and get it nice and hot, then pour your batter in to the ring.  You do not need to fill them more than half way.  This will make bottoms nice and crisp.
Once it has cooked and has a golden bottom (cooked on medium heat for approx 3 minutes) then flip over (ring mold included) and cook the other side for 3-4 minutes.
Let it cook on a cooling rack
